Kolache (pronounced Ko-lah-chee) is a delicious Czech pastry made of a yeast dough and usually filled with fruit, but sometimes cheese. The ultra-traditional flavors — such as apricot, poppy seed, prune and a sweet-but-simple farmer’s cheese — can be traced back to the pastry’s Eastern European origin. The flavors and fillings have evolved over time. Blueberry, cherry, raspberry, strawberry and cream cheese are just a sampling of flavors available today.
Our Kolache are filled with a variety of fruit from our artisanal jams, poppy seed or sweet cheese fillings and sprinkled with streusel. Quantities of 1 or 2 Dozen (or larger) can be pre-ordered. We offer variety 4-packs at our local Farmer’s Markets.
Ingredients: Dough – wheat flour, milk, butter, eggs, sugar, yeast, salt. Streusel – sugar, wheat flour, butter. Fruit Fillings (varies by flavor) – fruit (berries, stone fruits, etc), sugar, cornstarch, citrus zest and juice, spices (opt) (NOTE: most of the time we also use a jar of one of many of our jams!). Cheese Filling – cream cheese, ricotta cheese, sugar, wheat flour, lemon zest. Poppy Seed Filling – poppy seeds, milk, honey, sugar, cornstarch, vanilla, cloves.
